		<description>I think that&#039;s enameled cast iron, which allows the pancake to rise over the top of the skillet.  But the &quot;Dutch Baby&quot; or &quot;Popover Pancake&quot; (for the less geographically inclined) is worth every minute!  I prefer mine with a little nutmeg, lemon juice and powdered sugar.</description>
