Over at Making Roma Roma Lara has blogged about one of my favorite Saturday morning rituals; The Dutch Baby Pancake.
Although I am a big fan of Roma Roma, I think the original recipe at Gourmet, with vanilla, cinnamon and nutmeg adds that extra punch to the Saturday morning ritual. The process of making this pancake; the cast iron pan, fresh lemon and vanilla, is almost as fun as eating it.
Next time you have a few extra minutes on a Saturday morning try this recipe. If you do it right, you will be thanking me and Lara of course.

I think that’s enameled cast iron, which allows the pancake to rise over the top of the skillet. But the “Dutch Baby” or “Popover Pancake” (for the less geographically inclined) is worth every minute! I prefer mine with a little nutmeg, lemon juice and powdered sugar.
